Meat FREE Monday__Pasta Night!

Forgive the sparse/frugal dinner idea, but here's today's Meat Free Monday meal, using just 6 ingredients, prepared in less than 6 minutes*. 

*That is, if you've already done your Sunday food prep, 
and have the pasta and broccoli prepared in advance.

Since I'm traveling to Vietnam this week, this is what a frugal dinner looks like, as I'm trying to use up the last of my groceries from my last Kate and Kimi order. 

 STEP 1: Sautée tomato, onion, garlic and olive oil.
STEP 2: Add White Beans (mash a little bit of them to make the sauce thicker).
STEP 3:  Add Broccoli
STEP 4: Add Pasta
STEP 5:  Eat and enjoy!

Disclaimer:  I know the pasta in the photo below looks relatively dry, but I'm a weirdo and I like my pasta dry.  I HATE when pasta is drowning in sauce.  Also, I know it's a crime in Italy to not only use boxed pasta, but to cook it in advance and store it in the fridge, but in order to cook quickly, I make it the night before on Sunday, and use it right away on Monday.  I wouldn't recommend preparing pasta and then storing it/using it at the end of the week.  It won't taste nice.

Also, the generous portion size is so that I can bring food to work for Tuesday's lunch.

Wally the penguin timer was supervising Pasta Night.  He was making sure the meal took less than 6 minutes to prepare!
