Happy Birthday to an amazing PE/Health educator!

Kirsten Gray is an inspiring colleague to work with. Her commitment to elementary school students and to her swim team is exemplary. Her enthusiasm for healthy living is contagious, and her students are well versed in all aspects of wellness by the time they arrive to middle school.
Personally, we share a love for Spain, and the Spanish language. She is also a terrific baker; she is especially known for her banana bread!
So today I dedicate this post to Kirsten, and wish her a wonderful birthday and new year ahead filled with health and happiness!

Meat Free Monday_Veggie Stir Fry


Here is this week's "Meat Free Monday" post.
As I've posted before, I do all of my food preparation for the week on Sundays. This week, I chopped and stored green beans, zucchini, yellow squash, cabbage, onions, carrots, broccoli, cauliflower, red, yellow and green peppers, spinach, cucumbers and pineapple.

Here are the ingredients for today's recipe:
Broccoli
Cauliflower
Carrots
Peanuts
Peppers
Pineapple
Light dressing of soy sauce

Heat a tablespoon of peanut butter in a saucepan over low heat.
Add ingredients in the order listed above.
Add a 1/4 cup of water to help the vegetables steam.
Sautée over medium heat for about 12 minutes.
Add salt and pepper to taste.
Serve immediately with brown rice.

Food preparation is key!
Here's what I want you to do today if you don't have chopped fruits or vegetables in your refrigerator or freezer; get out a knife and cutting board and start chopping!

Meat Free Monday.. Crema de Patatas

Try this simple and easy soup for dinner tonight!

Peel and cube 3 potatoes, and cube 1/2 of a red onion.

Fry onion in small pat of butter for 1 minute over low heat.

Add potatoes and 1 cup of water to the onion and butter mixture.

Boil for 20 minutes over medium heat.

Turn off the heat and mash mixture with a fork until consistency is lumpy (doesn't have to be absolutely smooth).

Add 1 cup of skim milk and stir over low heat for 3 minutes.

Turn off heat, and add salt, white pepper and parsley to taste.

 

The final step is to enjoy the soup and share this recipe with someone you love!
